Brought to life by the 20/WOL group, Chef Ryan Kim and Chef Michelle Tanujaya, the husband-and-wife duo behind the brand, have infused Fragments with their shared passion for reimagining classic pastries with a modern, artisanal touch.

A Journey of Passion and Precision

Fragments first emerged in 2021 as an online patisserie, introducing a modern take on classic desserts with a signature style that blended French techniques with Korean influences. With a growing following and a reputation for exceptional craftsmanship, Fragments opened its first physical store in Grand Indonesia, bringing its artisanal pastries to a wider audience. Now, with the launch of its latest store in ASHTA District 8, Fragments takes another step forward—offering not just desserts, but a fully realized space where design, flavor, and culture intertwine.

A Space of Thoughtful Simplicity

Stepping into Fragments at ASHTA is a deliberately designed space that mirrors the patisserie’s philosophy: clean, modern, and warm. Stainless steel and concrete create a minimalist, contemporary base, while wooden accents, leather seating, and soft lighting introduce a welcoming contrast. The result is a gender-neutral, refined space—elegant yet unpretentious, perfect for those looking to grab a quick bite or linger over a pastry and coffee.

A Menu Rooted in Innovation

Fragments has always been about taking time-honored recipes and giving them a unique, modern twist. The ASHTA store continues this tradition with signature items that define its approach to pastry-making.

  • Bagel Sandwich – Inspired by Chef Michelle Tanujaya’s love for bagels from her time in the U.S., combined with her later discovery of softer, Korean-style bagels, Fragments offers a version that is chewy and crusty on the outside, but light and airy inside. Available in variations such as lox with cream cheese, tomato, and capers; egg salad; and hummus with fresh greens, these bagels offer a perfect balance of flavor and texture.

  • Financier – A French classic with a Fragments touch. Made with brown butter and almond meal, these little cakes are light yet deeply flavorful, with a crisp exterior and soft interior. Fragments takes it a step further with unexpected flavors like tomato balsamic, churros, and gorgonzola cheese, adding depth to an already refined pastry.

  • Gorgonzola Basque Cheesecake – Building on the success of Fragments’ original Basque Cheesecake, this version introduces gorgonzola cheese, bringing a subtle tanginess that complements the caramelized top and custard-like filling. A bold twist on a beloved favorite.
